These salted almonds are super simple to make and they are very delicious. We normally use these almonds as a pre-dinner snack when having guests or pack them in small bag and bring them to work. They are perfect as a healthy snack in the late afternoon when you are just really hungry and the dinner is still hours away.

These homemade salted almonds are simple to make and it takes only about 40 minutes to make a batch. First let the almonds soak in a brine for about 20 minutes and then bake them in the oven for about 20 minutes - and that's it.

If you are more into a sweet almond snack I would like to recommend these sugar roasted almonds which is a traditional Nordic treat especially during Christmas and the winter months.

They are also super delicious and great as a snack for special occasions.

Ingredients

Metric - US Customary

  • 200 g almonds
  • 4 tbsp salt
  • 2 dl boiling water

Instructions

  • Boil 2 dl (1 cup) of water and dissolve 4 tablespoons of salt in it. Turn off the heat.

  • Pour the almonds into the water and let them soak for about 20 minutes.

  • Drain the water from the almonds. Place the almonds in an even layer on an oven tray/pan lined with baking paper.

  • Sprinkle the almonds with some extra salt and bake them at 150 C (300 F) for about 20 minutes.

    I love the fact that there's no additional oil to be added--all of the other recipes I've found have called for the hot, roasted nuts to be tossed in a bit of oil before cooling. Who needs it!!!!!

    I’m from central California in the San Juaquine Valley. We farm almonds. I’ve been roasting myself and have tried several different recipes, but......this one is by far the most delicious recipe yet. The nuts I roast are 100% raw so have a stronger almond flavor than store bought. All commercially sold almonds are pasteurized to a certain degree because they are shaken to the ground during harvest. Yes even “raw” store bought almonds have been pasturized if they come from America. I just absolutely love this recipe. The nuts are super crunchy and have the best salty goodness to them of all other recipes. Most recipes call for oil and that is what drew me to your recipe - no oil. Great Job! Thank you.

    These are awesome! I have been looking for a lower salt version than I can find in stores. This allows me to control the amount of salt that I put on and in the almonds. Made a batch following the recipe here and they are excellent! Then made another batch with less salt, but then also coated the almonds in maple syrup, a small amount of veg oil, 1/4 tsp chili powder, and 1/8 tsp cayenne powder. Sprinkled large grain sea salt before roasting. AMAZING!

    I have been buying those from the Grapetree and was disappointed to find they don't stock them anymore so I thought I'd give this a try. They are exactly the same as the ones I bought and even my husband who is not a salt fan can't leave them alone.
